L’histoire de cette recette a commencé avec une photo trouvée au hasard de Pinterest. C’était décidé : pour Noël, je voulais faire ça !
Le problème ? Postée par Larousse Cuisine, elle est issue d’un livre – Cette année, je fais ma bûche ! de Valéry Drouet – que je n’ai jamais trouvé… Bon… OK. Pas grave : je vais « inventer » ma propre recette, avec rien que des ingrédients que j’aime et puis voilà !
Alors j’ai décidé de faire des macarons à la noisette et de les fourrer avec de la mousse au chocolat au tofu soyeux. Histoire d’être sûre, j’ai quand même testé ma recette avant Noël – la bonne excuse… 🙂 : délicieux !
Pour les macarons, je suis allée puiser chez Confessions d’une gourmande et j’ai tout simplement remplacé la poudre d’amande par de la poudre de noisettes grillée. J’ai trouvé un tas d’autres recettes de macarons dits « à l’ancienne », mais celle-ci était la plus simple, sans bain-marie et tout le tralala… Alors – sans plus attendre – ma réinterprétation de cette jolie photo… 🙂
Pour 5 personnes :
– 160g de poudre de noisettes grillées
– 130g de sucre glace
– 2 sachets de sucre vanillé
– les blancs de 2 gros œufs
– 150g de chocolat noir pâtissier
– 300g de tofu soyeux
– pour décorer : coco râpée, pralin, décorations en sucre, paillettes culinaires…
– des bâtonnets en bois, type esquimaux
Pour faire les macarons, mélangez la poudre de noisettes, le sucre glace et le sucre vanillé, puis ajoutez les blancs d’œuf et fouettez la préparation pendant 2 minutes.
Pour avoir des macarons réguliers, dessinez au crayon sur du papier cuisson 10 cercles à l’aide d’un verre ou d’un petit bol. Le mien faisait un peu moins de 8 cm. Retournez le papier cuisson : vous devez voir à travers les cercles que vous avez tracés. Avec deux cuillers, remplissez les cercles en essayant de les faire tous de la même épaisseur (à peu près, hein !). Faites les cuire environ 20 minutes dans un four préchauffé à 170°C. Une fois cuits, faites-les refroidir sur une grille.
Pour préparer la mousse au chocolat, faites fondre le chocolat au bain marie. Mélangez-le au tofu soyeux, puis passez le tout au mixeur plongeur jusqu’à l’obtention d’une crème lisse.
Une fois les macarons refroidis, vous pouvez – si vous le souhaitez – les rendre plus festifs avec des paillettes décoratives (je les ai choisies argentées, en accord avec ma table). Disposez sur un macaron (plutôt « sous » un macaron d’ailleurs, pour être exacte) 2 à 3 bonnes cuillers de mousse au chocolat, puis – avec un second macaron – appuyez sur la mousse en la faisant déborder très légèrement sur les côtés. Continuez avec les 8 autres macarons, 2 par 2. Insérez ensuite les bâtonnets (dont vous pouvez décorer l’extrémité avec de la peinture, du masking tape…) dans la mousse. Pour décorer l’intérieur de votre dessert, faites tourner chaque double-macaron dans votre main en parsemant sur la partie chocolatée de la noix de coco râpée, du pralin, des vermicelles colorés ou ce qui vous fera plaisir. J’ai personnellement opté pour la noix de coco, qui évoquait la neige… Et voilà, c’est déjà fini !
Pour la présentation, j’ai d’abord pensé faire une forme de bûche, comme sur la photo initiale. Mais je pense que – dans ce cas-là – il faut coller les macarons entre eux (avec un peu de mousse au chocolat, ou de la colle alimentaire, peut-être ?). Mais je ne n’avais pas de joli plat à cake / bûche alors j’ai eu l’idée de faire une bûche verticale ! Bon, au bout de 3 macarons, patatras… Finalement, j’ai opté pour une présentation plus simple, en couronne, qui s’est révélée au final joliment efficace. Adjugée !
Toute mon enfance, pour moi, les macarons, ça a été cette recette à l’amande (que je détestais, d’ailleurs) que l’on trouvait à St Emilion, dans l’idée de ce que je vous présente aujourd’hui, et non par les macarons colorés et fourrés que tout le monde connait… Et puis, toute mon enfance, la galette des rois, ça a été une couronné briochée, avec une pointe de fleur d’oranger et recouverte de perles de sucre. Et puis l’on grandit et l’on découvre ces régionalismes qui étaient pour nous des mondes… 🙂
