Je suis toujours autant sous le charme de la cuisine thaïlandaise ! Les saveurs de piment et de citron vert, la menthe fraiche, les cacahuètes, les légumes qui croquent… La salade de papaye verte est d’ailleurs mon petit plaisir à chaque passage chez Tien Hiang, lors de mes séjours parisiens ! Et le ciel maussade me donne des envies d’exotisme… A défaut d’un billet d’avion, je file en cuisine !
Il y a un peu plus de 6 ans de ça, je vous proposais sur Végétatout une recette de pad thaï végétarien (déjà vegan, en fait.. !). Depuis, mes goûts ont évolué (j’ai arrêté de bannir l’ail de ma cuisine, par exemple), ma façon de cuisiner également, j’ai davantage de place, davantage de produits dans mes placards…. Bref ! Hier, quand j’ai eu envie de faire du pad thaï, je me donc tournée vers cette ancienne recette, mais j’ai – surtout – eu l’envie de lui donner un coup de neuf ! Alors c’est parti pour le pad thaï version 2.0 🙂
Pour la sauce de ce pad thaï, je me suis inspirée de la recette de Cécile du Palais Savant, à une petite exception près : je n’avais plus de beurre de cacahuète (enfer et damnation…). J’ai donc mis des cacahuètes concassées à la place, et c’était très bon ! Allez-y les yeux fermés ! 🙂
Pour 3-4 personnes :
– 350g de nouilles de riz larges
– 125g de tofu fumé (ou plus…)
– 200g de pousses de soja
– 1 à 2 carottes râpées
– 2 gousses d’ail hachées
– 10g de cacahuètes hachées
– menthe (ou coriandre) fraiche
– huile d’olive et/ou de sésame
Pour la sauce :
– 120 ml de bouillon de légumes
– 4 cs de tamari
– 4 cs de jus de citron vert
– 4 cs de sirop d’agave
– 40g de cacahuètes hachées (non salées)
– 1 cc de purée de piment
Commencez par râper et hacher tout ce qu’il y a à râper et hacher 🙂
Coupez ensuite le tofu en petits morceaux rectangulaires. Dans un wok, faites chauffer votre huile (olive et/ou sésame selon vos goûts et le contenu de vos placards), puis faites dorer le tofu. Quand il commence à se colorer, ajoutez l’ail. Laissez cuire quelques instants en mélangeant régulièrement, puis ajoutez les pousses de soja et les carottes.
Préparez la sauce en mélangeant dans un bol tous les ingrédients indiqués ci-dessus. Une fois la sauce prête, versez en environ la moitié dans le wok et mélangez bien.
Mettez les nouilles de riz dans un saladier (supportant de l’eau bouillante) ou une grande casserole, et recouvrez-les d’eau bouillante. Séparez-les avec une fourchette. Egouttez au bout de 5 minutes. Avec une pince à spaghettis, déposez petit à petit les nouilles de riz dans le wok en mélangeant bien à chaque fois, de façon à enrober les nouilles de sauce. Alternez sauce restante et nouilles jusqu’à ce que vos deux récipient soient vides. Les nouilles de riz doivent être bien colorées. Servez dans des assiettes ou des bols, parsemez de menthe fraiche, de cacahuètes concassées et de pousses de soja (s’il vous en reste un peu) et servez avec des quartiers de citron vert. Dégustez sans attendre !
Avec une cuillère à café de purée de piment, vous obtiendrez un plat un peu relevé, avec une touche piquante. A vous de doser en fonction de vos goûts.
Le pad thaï se sert traditionnellement avec de la coriandre fraiche et non de la menthe. Mais je n’aime pas la coriandre fraiche, et j’adore l’association menthe-citron vert donc… là encore, à vous de voir ! 🙂
Vous trouverez des nouilles de riz en épicerie asiatique, voire – plus simplement – dans le rayon cuisine du monde de votre supermarché. Les nouilles de riz sont sans gluten.
